Buddha Bowl

Chicken

  • Chicken Bowl 1 lb
  • Cumin 2 tsp
  • Oregano 2 tsp
  • Salt to taste
  • Preheat oven @ 425 for 30 min

Sides

  • Corn 1/4 cup
  • Black Beans 1/4 cup
  • Cherry Tomato 1/4 cup
  • Shredded Cheese 1/4 cup
  • Cilantro to taste

Spicy BBQ Dressing

  • Spicy BBQ Sauce 1/2 cup
  • sriracha 1 tbsp
  • Greek Yogurt 2 tbsp
  • Olive Oil 1 tbsp
  • Milk 1/4 cup

Brown Rice

  • Brown Rice 1 cup
  • Water 2 cups
  • Bay Leaves 2
  • Bay Leaves 2
  • Salt For Taste
  • Lime Juice 2 tbsp
  • Cilantro 1/2 cup, chopped










Preperation




Prepare brown rice as per package instructions.




Once cooled, transfer 2 cups of brown rice into a bowl. Top with corn, black beans, cherry tomatoes, cheese and sliced avocado. Garnish with cilantro and a slice of lime.




To prepare spicy BBQ dressing, mix all ingredients in a mason jar or squeeze bottle until well combined.




Drizzle over prepared Buddha Bowl and Enjoy!
